Simple Coconut Curry Sauce

This curry sauce is surprisingly easy.  Add one can of coconut milk to a heavy bottomed sauce pan with one cup of stock.  Add 2 tablespoons of red curry paste, 2 tablespoons of brown sugar and 2 tablespoons of fish sauce to the liquid and bring to a simmer stirring to incorporate.  I add about 2 cups of green beans, 1 medium peeled and diced yam or sweet potato and a thin sliced chicken breast.  I substitute broccoli for the green beans occasionally. Serve it over rice or quinoa.
