Leftover Lobster Lunch

What to do with the bits of lobster leftover from the feast the night before. I poached an egg and placed it ontop of somc mixed greens that I had just purchased at the local farmer’s market. I added pomegranate seeds, cherry tomatos, and walnuts that were delightfully cracked open with a rolling pin by my son. To top it off I drizzled a good extra virgin olive oil and some pinot noir vinegar on top with a pinch of sea salt, fresh ground pepper.
