Lentil Burgers

How many times have you worked away the morning only to get incredibly hungry and don’t want to spend much time making something yummy and healthy because you really just want to feel good and work on. These are the times when creativity is flowing for me and I wish I could turn the hunger button off unless I have something already prepared in the frig that takes no effort to put together. Lentil burgers are a favorite. I make a batch and eat them for several days. Sometimes I crumble them ontop of greens with sheep’s milk feta and a mustard vinegerette. Or I will eat them burger style with garlic aioli or plain vegannaise with an extra pinch of salt and some lemon juice.

  • 1 cup lentil du puy

  • 1 egg
  • 1/2 red onion
  • 1 T salt
  • 1/2 cup – 1 cup bread crumbs
  • 3 T olive oil

Simmer the lentil in a small saucepan with 2 cups of water for about 20 minutes. Drain any excess moisture off lentils and let cool completely, cooling allows the lentil to firm back up and release all of its moisture. Place lentils in a food processor and add remaining ingredients. Blend briefly.  Add breadcrumbs till you get the consistency in the photo. Heat olive oil in a saute pan.  Make burger patties by hand shaping and place in the heated pan.  Cook for about 5 minutes then carefully flip burger using a spatula to lift and another flat wooden spoon to guide the burger over to the other side.  The burger may look like it is falling apart when turned but you can push the sides back together with your spatula and spoon. Cook on the other side till browned.

    Great recipe EJ, and super easy to make gluten free – with GF breadcrumbs (which I always have ;) Have you ever made this in a vegan version? maybe substitute a tiny bit of egg replacer or xanhan gum as a binder, with some nut meal…

    Can’t wait to try these! I’ll have to make up a batch to put in the fridge. I love Edie’s idea of adding nut meal, too. FoodieBoy and I will definitely eat these up, maybe with a bit of avocado on top.
