Flame Seared Lobster Tail with Seasoned Butter in the shell

Tis the season for tails!  Run to the seafood department if you don’t have a lobster fairy to deliver them to your door freshly caught.

  • Tails
  • lemon juice and zest from one lemon
  • 1 stick unsalted butter
  • 1 cup of chopped parsley
  • 1 head of chopped garlic

Melt butter and add all the ingredients plus a generous pinch of salt. Steam tails for 10 minutes or until almost completely done. Cut the tails down the middle, the meat should be white but still have a slightly undercooked opaque look. Lift the tail meat out of the shell and pour the seasoned butter into the shells. Replace the meat back into the shells.  Preheat the grill so the metal grate is hot.  Brush a little of the butter onto the top of the meat or spray with oil so it won’t stick to the grill grate.  Sear the tails meat side down for 1 minute only. Serve with cut lemon wedges and a sprinkle of smoked sea salt.
