Chicken Curry with Green Beans and Sweet Potatoes

  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 T fish sauce
  • 2 T red curry paste
  • 2 T brown sugar
  • 2 cups sweet potato cut into cubes
  • 1 cup green beans cut into 1 inch pieces
  • 1 lb chicken cut into slices lenghtwise
  • 1 T lime juice
  • 1 cup chopped basil

Dishes like this one make entertaining simple. The rich flavors blend easily and quickly to make a delicious one pan meal.  I use a standard deep sided frying pan with a glass lid.  Add the coconut milk, broth, red curry paste, fish sauce and sugar and bring to a slow simmer. Stir well to combine and as soon as a slow boil begins add the sweet potato and simmer for 8 minutes. Add the green beans and sliced chicken and simmer for another 8 -10 minutes. Off heat and let sit for 5 minutes then add lime juice and basil.  Serve with basmati rice or as a stand alone stew.
