Summer Corn Chowder

Sweet white organic NON-GMO corn is a treat these days and now is the time to get it. I wanted to combine it sweetness with some other summer favorites and add a splash of lowfat milk to give it a chowder flare and make it even more child friendly.

  • 4 cups of raw corn kernels shaved off the cob
  • 2 cups of lowfat milk
  • 1 large onion plus 1 medium shallot (about 2 cups)
  • 1 red bell pepper, seeded and diced (about 1 cup)
  • 1 medium zucchini diced (about 1 cup)
  • 2 cups of veg or chicken broth
  • 2 ripe tomatoes, seeded and diced or a pint of cherry tomatoes cut in half
  • 1 t salt
  • pinch of red pepper flakes
  • 1/2 cup of basil leaves cut into ribbons

I use a hand immersion blender or you can use a regular blender to puree the milk and 2 cups of the corn until smooth and creamy. Set aside. Heat 1T olive oil in a large soup pot and add the onion, shallots, red bell pepper and zuke. Saute gently until tender about 5 minutes. Add the remaining 2 cups corn and the broth and bring to a boil. Add the pureed corn and the tomatoes and off the heat. Let sit for 10 minutes, season with salt and red pepper flakes. Serve garnished with the basil ribbons.
