Crab Fried Rice

I know I am lucky that Salty Dog is an avid ocean hunter and this dish is delicious with fresh caught, steamed crab but you can make it with a good quality lump crab meat from your seafood department. The trick is to make a hole in the rice and cook each ingredient in the hole, stir it into the rice and repeat with the next ingredient. Finish it off with a little bit of tamari and a handful of chopped parsley and green onions.

  • 4 c white jasmine rice cooked
  • 2T minced garlic
  • 2T grated ginger
  • 1/2 c chopped onion
  • 1-2 c crabmeat cooked shredded
  • 2 eggs beaten and add a pinch of salt
  • 1/2c chopped tomato
  • 1 c frozen green peas
  • 2T butter
  • 1/2 c chopped parsley and green onions

Heat 2T olive oil in a large nonstick saute or frying pan. Add the onion, garlic, ginger and a pinch of salt. Saute about 5 minutes. Add 2T white wine and let simmer 1 minute. Add 2T butter melt and add the cooked rice and mix to incorporate. Make a well or hole in the middle of the pan add 1T olive oil and let the oil heat up a minute. Add the beaten eggs and don’t stir them till they begin to set then scramble them in their hole. Stir to incorporate into the rice. Remake the hole and add tomatoes and heat through about 1 minute and stir into rice. Reform the hole and add cooked crab and heat about 1 minute then stir. Repeat the process with green peas and anything else you want to add. Give it a good stir to make sure the rice is not sticking to the bottom then add 2T of tamari or soy sauce and the parsley/green onion mix. Pass the tamari at the table.
