White Bean Salad with Parmesan Anchovy Dressing

Open the fridge on a hot – end of summer day and there sits a cold white bean salad. The dressing thickens and the strong flavors of parmesan and anchovy are rich and creamy. I love the cold and hearty texture of the white beans and if I am not standing in front of the open fridge with my spoon then I sprinkle it on top of my salad… this salad could be food processed and made into a thick hummus style dip.

  • 2 15 oz cans of great northern white beans drained and rinsed well (spritz with bit of lemon juice after the rinse)
  • 1/3 cup grated parmesan
  • 1/4 cup lemon juice
  • 1 t lemon zest
  • 2 cloves of garlic
  • 1/3 cup olive oil
  • 1/8 t anchovy paste
  • 1/2t salt and 1/4t pepper
  • 1 cup chopped parsley
  • 1 pint of sweet cherry tomatoes halved

Mix parmesan, lemon juice, zest, garlic, anchovy paste and salt/pepper in the food processor and add the olive oil slowly through the tube while pulsing. Fold dressing into the beans and add tomatoes and parsley. Chill before serving.
