Bread Salad

The flavor level is HIGH on this one and I felt like one successful mama when my teenager devoured it for dinner. I made it two nights later and added inch wide pieces of cooked smoked bacon which made my mom ratings go thru the roof.

  • 1 large shallot
  • 3 T red wine vinegar
  • 1/2 c extra virgin olive oil
  • 1 T capers rinsed and chopped
  • 1 t anchovy paste
  • 1/2 c pitted kalamata olives
  • 3 cloves garlic pressed and a pinch of salt folded in to make a paste
  • 2 persian cucumbers peeled and diced
  • 8 plum tomatoes diced
  • 3 slices sourdough or country loaf bread
  • 1/2 c torn basil
  • optional: 1/2 lb inch long diced cooked smoked bacon

Dice the shallot and let it soak in the red wine vinegar for about 5 minutes while you prep other things. Add the capers, anchovy paste, garlic paste, olives and mix well. Add olive oil and combine. Let sit. Prepare the bread by brushing with olive oil and grilling or broiling till toasted. Tear into big pieces and place in serving bowl or platter. Put cucumbers and tomatoes (opt: bacon) on top of torn bread and add the vinegar, olive oil mix. Combine and make sure the bread pieces absord the liquids. Cover with a tea towel and let sit for an hour if you can wait that long. Before serving give it another stir and add the torn basil.
