Chili Relleno Rice

The lunch fairy delivered to Dr. Paul, the principal at Marisposa School for Global Education. He said this was the dish that got his attention. Gotta keep that fairy flying.

2 c cooked rice

2 c sour cream

1 box Pacifica condensed chicken soup (Whole Foods)

2 small cans diced mild green chilies drained

2 1/2c cubed Monterey jack cheese

salt and pepper

Lightly grease a 9 x 13 inch baking dish. Combine rice, sour cream, soup, chilies and cheese. Mix thoroughly and add salt/pepper. Spread in the prepared baking dish and bake for 20 minutes at 375.
