Goat Cheese Stuffed Artichoke

I posted a picture of a goat cheese stuffed artichoke on instagram and one of my favorite foodie friends Cass (age 12) said she wanted one for her birthday dinner! I am posting this one for you Cass!

  • 2 large artichoke
  • 8 0z goat cheese
  • 2 garlic cloves pressed
  • 1 T fresh squeezed lemon juice reserved
  • 1/2 t salt

Snip off the pokey tips of the artichokes. Place the artichokes in a large steamer pot and squeeze the remaining juice from the lemon halves on top. Place the lemon halves in the steamer basket alongside the artichokes. Steam about 45 minutes or until a bottom leaf is easily removed. Remove from pot and let cool. Pull open the top leaves and using a spoon scoop out the inside including the hairs that sit above the heart. Careful not to dig too deep into the yummy heart. Spoon in goat cheese mixture. Bake at 350 for 30 minutes to soften the cream cheese.  Enjoy!
