Collard Green Mini Wraps

I love having these bite size ready wraps in the frig whenever I need a snack. First take the collard leaf and cut the large spine out while the leaf is laying flat. The spine extends about 2/3 of the way up the leaf. Place the leaf in pot with boiling water and a steamer basket. Let the leaf steam for about 10 seconds on each side- just till the leaf has wilted and turned bright green. I like to make about 20 at a time.  Once the leaf is steamed and has briefly cooled, cut the leaf so it is now two pieces.  Lay the two pieces down flat and let them overlap slightly so the leaf appears whole. Next spread a layer of hummus and aoili over the seam of the leaf. Place your vegetables on top and gently lift the bottom of the leaf up. Fold the sides in like a burrito.  Begin a tight roll from the bottom up while tucking in the sides as you roll upward. Place the wrap with the open end under.

  • 1 julienned zucchini
  • 1 julienned carrot
  • 1.5 cups of chopped red cabbage
  • 1 red bell pepper chopped
  • ready made hummus and aoili
