Roasted Feta Peppers

Simple, mildly spicy and easy to put together as an appetizer.

  • 1 dozen fresh mini red peppers (not bell peppers)
  • israeli sheep milk feta (trader joes is my favorite)
  • 1/2 cup fresh oregano and parsely chopped
  • 1 T lemon juice
  • pepper

Mix 1/3 – 1/2 block of feta in a bowl using a fork to mash and blend the feta crumbles together. Add lemon juice, a couple grinds of black pepper, 1T olive oil and a couple pinches of the herbs to the bowl of feta and blend. Cut the tops off of each pepper, remove the seeds and stuff with the feta mix. Place in a roasting pan, drizzle with olive oil and the rest of the herbs. Roast at 350 for 1/2 hour or till the feta begins to melt and the pepper has softened.
