Lemon Roasted Brussel Sprouts with Bacon

We had the most wonderful Thanksgiving shared with 8 community families. One of the best recipes of the day was made by my friend and fellow home chef extraordinare, Jessie.  These brussels are roasted with chunks of bacon to enhance their deep rich flavor. Combined with bits of lemon -rind and all- which brightens and lightens the flavors perfectly. Jessie likes to roast them about 5 minutes longer than you might normally to create a delicious crispness of the bacon and rinds..

  • 4 cups brussel sprouts halved
  • 1/2 lb bacon chopped
  • 1/2 large lemon chopped
  • salt
  • drizzle of olive oil

Toss everything together with a light amount of olive oil. Sprinkle with salt and place in a preheated 450 oven. Roast for about 40 minutes and toss brussel mix twice during roasting.
